As the General Manager at Evans Prairie Country Club in The Villages, Florida, Steve Simpkins brings over 38 years of valuable experience in the restaurant industry. Originally from Herndon, Virginia, Steve has been a dedicated member of the FMK team for a little over two years.


Steve has contributed his expertise to various FMK establishments, including Chop House and Bonifay. His journey with FMK began as an Assistant Manager, showcasing his commitment to growth within the company.


In his role as General Manager, Steve's favorite aspect of working in The Villages is "Team Building" and fostering a positive workplace culture. He believes in creating an environment where team members not only get along well but are genuinely happy to come to work. Steve continues to play a crucial role in elevating the dining experience in The Villages, ensuring that both employees and guests enjoy a welcoming and enjoyable atmosphere.

Josh Carroll


Meet Josh Carroll, Culinary Manager at Evans Prairie Country Club in The Villages, FL. A Cocoa, FL native, Josh has been with FMK for 3 years, bringing 17 years of restaurant industry experience. He's worked at Belle Glade, Bluefin, and Evans Prairie.


Starting as a line cook, Josh has risen to Culinary Manager, showcasing his leadership and culinary skills. His favorite dish on the menu is the Shrimp & Vegetable Teriyaki, while guests rave about the Lemon Butter Haddock. With a passion for culinary excellence, Josh continues to make a mark at FMK Hospitality Group in The Villages, FL.
